When it comes to gluten free baking, almond flour recipes are hard to beat. This low-carb flour is an ideal option for people with IBS or following a paleo diet.

It offers all the flavor and texture of traditional baked goods, but without the grains that can cause bloating and other GI symptoms.

Almond flour recipes can also add valuable benefits to your goodies, like protein, trace minerals, and vitamins.

RECIPE NOTE: Orange is a great compliment to almond and makes these cookies extra flavourful, BUT if you prefer plain almond cookies, feel free to omit the orange zest.

Ingredients
 

  • 2 cups almond flour
  • 1/2 tsp baking powder
  • 1/3 cup maple syrup, or honey
  • 2 tsp vanilla extract
  • Zest of 1 orange
  • 25-30 raw almonds, to top cookies

Instructions
 

  • Preheat oven to 350F and line baking sheet with parchment paper.
  • Combine almond flour and baking powder in a bowl and whisk together.
  • Add maple syrup/honey, vanilla extract and orange zest to bowl and combine ingredients using a spoon until a sticky dough forms and holds together (add some juice from the orange if batter is too crumbly).
  • Scoop batter with a teaspoon and roll into a ball. Place on baking sheet (leave 1-2 inches of space between balls).
  • Press an almond into the top of each ball until a cookie shape is formed. For a chewy cookie, don’t flatten the dough too much.
  • Bake at 350F for 12-minutes or until edges start to brown. Let cool on baking sheet. Once cooled, store cookies in airtight container.

Notes

If you prefer plain almond cookies, feel free to omit the orange zest.

Ingredients
 

  • 4 pastured eggs*
  • 1/2 cup coconut oil, melted and cooled
  • 3 ripe bananas, mashed
  • 1 tbsp honey or maple syrup, optional
  • 1 tsp vanilla extract, optional
  • 1/2 cup coconut flour, sifted
  • 1/2 cup almond flour, sifted
  • 1 tsp ceylon cinnamon
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 dark chocolate bar, 85% or higher, chopped into chunks

Instructions
 

  • Preheat oven to 350. Grease muffin tin with coconut oil or use liners.
  • Beat eggs in bowl, mash bananas with a fork on a plate, then add all wet ingredients together and mix thoroughly.
  • Mix all dry ingredients in a separate bowl then add dry ingredients to wet ingredients and continue to mix until a thick smooth batter is formed. (TIME SAVER TIP: Use a food processor for steps 2 & 3, if you have one)
  • Add chocolate chunks into the batter and mix (save some to add on top).
  • Fill muffin tins 3/4 of the way with batter. Top with remaining chocolate chunks.
  • Bake for 18-20 minutes. Let cool before removing from tray.

Notes

*Substitute with 4 flax eggs or 4 chia eggs for egg free version:
  • 1 tbsp ground flax + 3 tbsp water (whisk until gelatinous and creamy) = 1 egg
  • 1 tbsp chia seeds + 3 tbsp water (Stir and allow to rest for 15 minutes) = 1 egg

Ingredients
 

  • 1 cup almond butter, unsweetened, raw or dry-roasted
  • 3/4 cup PurePaleo Protein, vanilla or chocolate*
  • 2 tbsp crushed nuts or seeds, optional, for crunchy topping
  • 1/4 tsp sea salt

Instructions
 

  • Using a food processor or high-power blender, combine almond butter, protein powder and sea salt. Use a spatula to scrape sides if needed. Mixture should be dense and smooth so it can be pressed together. If it's too runny, add more protein powder.
  • Using a tablespoon, scoop mixture and form into small balls. If balls are too sticky to form, place mixture into the freezer for 15 minutes then try again.
  • Roll balls in crushed nuts/seeds, if desired.
  • Place balls in large shallow glass container, leaving a bit of room between balls.
  • Store protein balls in fridge or freezer.

DIY pumpkin pie spice

INGREDIENTS:
3 tbsp cinnamon
2 tsp ginger
2 tsp nutmeg
1 ½ tsp allspice
1 ½ tsp cloves

I recommend buying organic ground spices to make this blend. Mix spices together in a bowl and store in a small glass jar. Feel free to double or triple this recipe so you have plenty of pumpkin pie spice for the season.

Chocolate Banana Avocado Mousse 

Are you struggling to find healthy dessert options that aren’t loaded with refined sugars, crappy oils and other nasty junk?

Healthy treats can be a hard find, which is why I like to get creative in the kitchen and whip up my own delicious and squeaky clean desserts.

Avocado mousse is one of my go-to healthy desserts. It’s super quick and easy to make – and packed with nutrients and healthy fats.

Check out my rich and creamy Chocolate Banana Avocado Mousse recipe. It’s gluten and dairy free making it a perfect low-carb, paleo and plant-based dessert.

Chocolate Banana Avocado Mousse

INGREDIENTS: (serves 1-2)
1 ripe avocado
1 banana
1/4 cup coconut milk (canned, full fat)
4 tbsp. cacao powder
2 tbsp of maple syrup or other natural sweetener of choice
Pinch of sea salt

Toppings (optional):
Cacao nibs
Fresh berries
Sliced banana

INSTRUCTIONS:

1. Place all ingredients (except for toppings) into a food processor or high speed blender.

2. Blend until you reach a smooth and creamy consistency.

3. Chill avocado mousse in the fridge for a cool dessert.

4. Add toppings and enjoy.

Want to turn this healthy dessert into a nutrient-dense breakfast? Add 1 scoop of protein powder to the list of ingredients and blend. If you’re using my recommended PurePaleo protein, I suggest leaving out the honey/maple syrup/stevia since the protein powders are sweetened with stevia. Add more coconut milk if needed.
